The Pumpkin Patch + This Week's Menu

Tuesday, October 9, 2018

Hey, friends! Happy Tuesday. Was it a long weekend for you? C didn't have preschool yesterday, and Steve was off work, so it kind of felt like we get a bonus weekend day (which would explain the absence of a post!).

Did you have a relaxing weekend, or a busy one? On Friday night, Steve and I made sure to tune in to 20/20 because it was all about... our wedding DJ. It's a crazy story, which you can read more about here, but basically: our DJ was arrested for a brutal murder that occurred in our hometown in 1992 and went unsolved all these years. He's a big name where we're from, so when he was named the suspect seemingly out of the blue (thanks to some fascinating DNA/genealogy technology), it was a pretty big shock. We've been following the case since.

On Saturday we had our annual pumpkin patch date with our friends at our local farm, which was super fun. It started nine years ago when Steve and I were newlyweds and the other couple was newly engaged -- we'd go out to a nice dinner and then do haunted hayrides or haunted prison tours, haha. Fast forward to 2018 and we have 6 kids between us, so our Halloween dates look a little different! But they're still a lot of fun. After we picked pumpkins, we came back to our house for some pizza and let the kids play.

Sunday we caught up with house stuff, I did a Target run, made Cuban sandwiches for dinner (the girls plates are below), and then we took the girls to the playground. And Monday I still had to work and we also had H's gymnastics and C's lacrosse. So we kept busy!

This week's menu is pretty simple:

Monday - Morningstar "chicken" nuggets, mac & cheese, peas

Tuesday - Baked potatoes w/ broccoli, cheese, and bacon

Wednesday - Taco night! Tacos, rice, and corn

Thursday - Pasta with creamy tomato sauce & Italian sausage

Friday - Leftovers

Saturday - Out

Hope your week is off to a great start! xo

  1. Kind of funny the 20/20 was about your town because the Dateline last week was about our's! We are going pumpkin patching with our friends this weekend and I can not wait!!

    1. Hi Lauren! It really was! It's one of our favorite fall traditions. I still need to go buy a less expensive pumpkin to carve up, though. ;)

    1. It really is the best, isn't it?! They make everything so much more fun. :) You should try the Cubans, if you haven't -- so easy and delish!

  5. Your menu sounds really good for the week. Do you have a cuban sandwich recipe to share? I love pumpkin patch dates and how you all still go together.

    1. I do! I should've linked it. But basically: you take a baguette (or any loaf of bread/roll you like best) and slice down the middle, coat the two sides with dijon mustard, then layer provolone or swiss cheese (I like provolone), ham slices, and a sandwich slice pickle, and repeat the layers one more time. I usually grill them on the stove top, or you could put them in a George Foreman, but this time I stuck them in the oven with a little bit of butter on top of each roll for 20 minutes on 350 and they came out great!

  6. Such a lovely family photo, and a great tradition! Eek re your DJ - its like when people get interviewed on tv about weirdos and they always serm to say 'he was a lovely normal guy' - creepy or what?!

    1. Exactly! And just especially crazy and unsettling and bizarre that we gave him our money, hugged him... bleh. But I must say, the whole case is fascinating because of the technology used -- I hope it helps a lot of other families find justice and peace.

  7. I took off on Monday to be home with the boys so it was nice to have that extra day. I wish every weekend could be a long weekend. I love that you had your annual pumpkin picking. How crazy about your wedding DJ?! I would have been glued to 20/20 too. I've never made my own Cuban sandwiches but yours look really good! Sierra Beautifully Candid

    1. So glad you got to enjoy an extra day, Sierra! I agree - I think all weekends should be three days. ;) Isn't that wild? I might actually rewatch the 20/20, haha. I posted the (very simple) recipe I use for the Cubans above under Danielle's comment (forgot to link it in the post), if you're interested! xo
